Let Me Explain

Last week I found myself walking to work and feeling happy. In my bag was a tin of the Trader Joe’s stroopwafels and as soon as I got into the office I was going to make myself a cup of tea, put my stroopwafel on top to warm it, and get my day off to a delicious start.  If you don’t know what a stroopwafel is, it’s Dutch cookie who’s name literally means syrup waffle.  They are amazing on their own but go next level if you put them on top of a mug filled with a hot beverage like tea, coffee or hot chocolate. The cookie traps the steam from your beverage, causing the caramel inside the cookie to soften and become gooey.

The Birth of a Big Idea

So I’m thinking about how I can’t wait to have my stroopwafel when I remembered also seeing at Trader Joe’s stroopwafel ice cream sandwiches, basically the most brilliant idea ever – combining stroopwafels with ice cream in the form of a sandwich.  That got me thinking about combining things with ice cream, and how some combinations are unexpected but incredible like affogatos, and how much I loved affogatos and really wanted to have one soon.  Then it hit me – what if I combined a stroopwafel with an affogato? I could make a stroopwaffogato!

Let’s Get This Party Started

After spending an afternoon experimenting I’ve found there are two approaches to making the stroopwaffogato.  In the first approach stroopwafels were layered between scoops of ice cream.  This resulted in the stroopwafel getting super crunchy from the cold of the ice cream – which half of my testers preferred.  The second approach put the stroopwafel at the bottom of the glass and soaked it with espresso before adding ice cream, so the cookie stayed soft and almost melted, which the other half of  my testers preferred (this was my personal favorite).  A third idea we had but were too full to try – chopping up the stroopwafel and mixing into the ice cream before making the affogato.

Whatever approach you decided to take just remember, there are no wrong answers here, just lots of different ways to try and get things right.

 

THE RECIPE: STROOPWAFFOGATO

I used the mini stroopwafels so that they would fit in my ice cream dishes. If you want to use the big cookies you’ll just need to use a bowl.

Ingredients

1 shot of espresso, or 3 Tablespoons of strong brewed coffee
1-4 mini stroopwafel cookies (depending on if you want chewy or crunchy)
2 scoops vanilla ice cream

Step 1: put a stroopwafel at the bottom of your cup

 

Step 2: fill your cup with hot espresso

Step 3: top with vanilla ice cream

 

Step 4: top with another stroopwafel and add more espresso if desired

 

Step 5: enjoy!
