Not sure what to do with your bundle of overflowing deliciousness once you get home?  Yes, you can make a vat of sauce and jar or freeze it.  But that takes time and makes your kitchen HOT.  Instead, throw together this fresh tomato salad that can use any variety of tomatoes and only takes a few minutes to make.

Don’t Let Anyone Tell You Otherwise, Presentation IS Everything

This garden fresh tomato salad is guaranteed to impress your guests, so put it on a fancy platter to give it the presentation it deserves.  Somehow fancy dishes always makes the food taste better and this tomato salad is no exception.

This recipe is literally as easy as 1, 2, 3!  For added depth of flavor you can toast the pine nuts in a pan before adding to the tomatoes.  Or if you really don’t want to add any heat to your kitchen use them raw, as I did in this recipe.

FRESH TOMATO SALAD – THE RECIPE

Ingredients

1 1/2 pounds ripe tomatoes, cored and cut 1/4″ thick
3 Tablespoons of extra-virgin olive oil
1 Tablespoon minced shallot
1 teaspoon lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
2 Tablespoons toasted pine nuts
1 Tablespoon torn fresh basil leaves

Step 1

On a large plate or shallow platter, arrange tomatoes to desired effect.

Step 2

In a small bowl, whisk together olive oil, minced shallot, lemon juice, salt and pepper.  Pour mixture over tomatoes then sprinkle with toasted pine nuts and torn basil leaves.

Step 3

Serve and enjoy!
