Pumpkin Isn’t Just for Thanksgiving
There are few things that go together as well as Thanksgiving and Pumpkin Pie. And while that pairing may be iconic, it unfortunately leaves out the other 11 months of the year when you could be eating pumpkin as a soup, a side dish, a dessert or, best of all, as a moist, delicious snack you can eat any time of the day.
It’s Everything You Want in a Fall Treat
Our super moist cake is bursting with all the fall flavors traditionally found in a pumpkin pie, but packaged up in a portable snack-sized square. Our version includes chocolate chips for a little added fun and crunch. As Easy at 1, 2, 3
Made with one spoon and two bowls, it comes together in less than 10 minutes. It’s so easy to make a kid could do it (with adult supervision when working with the oven). The hardest part of baking these squares is waiting long enough for them to cool down before diving in and eating. Best of all (or worst, depending on your perspective) is that they get even more moist the second and third day.
THE RECIPE: PUMPKIN SNACKING SQUARES
Ingredients
1 cup all-purpose flour
1 Tablespoon pumpkin pie spice
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup unsweetened pumpkin puree
1 cup granulated sugar
1/2 cup vegetable oil
2 eggs
1/2 cup semi-sweet chocolate chips
Step 1
With oven rack in middle, pre-heat oven to 350 degrees. Prepare 8′ square baking pan (grease and flour or spray with baking spray).
Step 2
Whisk flour, pumpkin pie spice, baking powder, baking soda and salt together in a large bowl. Whisk pumpkin, sugar, oil and eggs together in a second bowl. Using a rubber spatula, stir pumpkin mixture into flour mixture until combined. Mix in chocolate chips until just combined.
Step 3
Transfer batter into prepared pan, smoothing out top with rubber spatula. Bake about 35 minutes, until toothpick or knife inserted in center comes out clean. Cool cake on wire rack for 20 minutes. Then remove cake from pan and let cool on rack for one hour.
