Creamsicle Cravings

I like to think of the Creamsicle Popsicle as the unicorn of frozen treats. Unlike a typical popsicle, the Creamsicle features an unexpected combination of orange ice and vanilla ice cream.  The ice cream is hidden in the center, ensconced by the orange ice and, if you’re super careful, you can eat the ice and ice cream separately.  Best of all, it magically blends citrus and cream for the ultimate flavor combination of a bright citrus rounded out by a rich cream.  It’s creamy yet refreshing, rich and yet light.  It shouldn’t be possible yet it is, and it’s perfect.

Homemade Ice Cream Without the Ice Cream Maker

The best part about our Creamsicle recipe is that it doesn’t require an ice cream maker to make it!  It’s as easy as whipping some cream, adding fresh citrus zest and juice, and freezing the combination overnight.  This is one recipe you truly do not need to know how to bake to make.  If you have a blender or a food processor and access to a freezer you can do this.

ORANGESICLE ICE CREAM – THE RECIPE

Ingredients

1 1/3 cups heavy cream

1 cup sweetened condensed milk

1/2 cup evaporated milk

1/4 cup light corn syrup

2 Tablespoons sugar

1 Tablespoon grated orange zest plus 1/2 cup juice

1 teaspoon grated lemon zest plus 3 Tablespoons juice

Step 1

Process cream in food processor or blender until stiff peaks form, about 30-45 seconds, scraping down sides of container as necessary.  Add condensed milk, evaporated milk, corn syrup, sugar, orange zest and juice, and lemon zest and juice.  Process until thoroughly combined, about 30-45 seconds.

Step 2

Pour mixture into an air-tight container, cover and freeze until firm (at least 6 hours).
