What Exactly Is a Crumble Anyway?
Crumble, cobbler, crisp, buckle, grunt, slump, betty, are all names of fruit-based desserts with some sort of dough containing flour, butter and sugar. The doughs range from biscuit to cake to more of a streusel. A Crumble has a crispy topping that contains oats, giving it a more grounded than sweet flavor and texture. Recipes feature either fresh fruit or frozen – they generally aren’t interchangable – so make sure to check before you get started (this one uses fresh blueberries). The best way to serve your Blueberry Crumble is in a blow with a nice scoop of vanilla ice cream.
THE RECIPE: BLUEBERRY CRUMBLE
Ingredients
1/2 cup granulated sugar
4 teaspoons cornstarch
1/4 teaspoon salt
cups fresh blueberries
2/3 cup all-purpose flour
1/2 cup old-fashioned oats
1/3 cup packed light brown sugar
1/2 teaspoon ground cinnamon
6 Tablespoons unsalted butter, cut into 6 pieces and chilled
Step 1
Adjust oven rack to lower middle position and heat to 375 degrees. Mix granulated sugar, cornstarch, and 1/8 teaspoon salt in a large bowl. Add berries to flour mixture and toss to coat. Move mixture to an 8-inch square baking dish.
Step 2
In a food processor, process flour, oats, brown sugar, cinnamon, and remaining salt until combined. Add in putter pieces and pulse until clumps start to form that are the size of a dime. Put the crumble mixture into a bowl and gently pinch together any remaining powdery parts until they’re gone. Then sprinkle crumble evenly over your berries.
Step 3
Bake until filling bubbles around the edges and the topping is golden brown, about 30 minutes. Remove from oven and cool on a wire rack for at least 30 minutes, then it’s ready to serve! If you have leftovers to store just wrap it in saran wrap for up to a day, making sure to bring back to room temperature before serving.
